Organic Avocado and Orange Salad

  • 2 ripe avocados
  • ½ small cucumber, diced into 1cm cubes
  • 2 celery stalks, cut into 5-mm cubes
  • 4 leaves of Chinese white cabbage, cut into 5mm thick slices
  • ½ cup sunflower seeds
  • juice of 4 oranges, to make approximately
  • 2 cups of juice
  • 2 teaspoons sea salt

Slice the avocados in half and carefully remove the seeds.

With a teaspoon, remove the flesh in chunks and place in a bowl.

Add the cucumber, celery, Chinese cabbage and sunflower seeds to the avocado.

Stir in the orange juice, add the sea salt, and allow to marinate for 1 hour, then serve.
